Hi there Glimpse Insiders! My name is Jody and I am the blogger behind the hobby room, which, if you have visited before, you know is a craft, food, and DIY blog. I wanted to do a recipe for you all today, something delicious and easy that is perfect for breakfast, and works pretty well for dinner, too.
I’m not even going to ask if you ever have those nights when everyone was starving five minutes ago and you don’t know what to cook for dinner. I don’t know anyone that doesn’t apply to. As much as I love to cook, I really don’t plan ahead well, so this is something I face A LOT. If you’re tired of cold cereal or chicken nuggets being the answer to that question, read on, I’m here to help.
I have been told my more than one friend that my parents are food snobs which meant growing up that food was made from scratch from fresh ingredients and we didn’t have processed food in the house. Oh, how I longed for a box of Kraft Dinner and some Twinkies. So on “what do we have for dinner?” night there were no chicken nuggets to pull out of the freezer, my mom always made dutch babies. We called them, fittingly, big pancakes. I don’t know if we ever had big pancakes more than a handful of times for breakfast, I remember eating them almost exclusively for dinner, which probably isn’t what happened in reality, but isn’t it funny how we remember things?
It’s just been recently, faced with a surfeit of eggs, that I found the recipe again and started making big pancakes for dinner at our house. We really like to do breakfast for dinner from time to time, so this has fit in perfectly and the boys (and the Mister, let’s be honest) are one hundred percent behind eating anything with berries and whipped cream. I keep unusual things stocked in the house all the time, like whipping cream, so I have all the ingredients to make big pancakes on any given day. If you don’t consume high-fat dairy on a regular basis at your house, then you’ll have to plan ahead and get some. Or try this: top with whole thing with berry preserves and powdered sugar. Yum.
What it boils down to: this is a quick and easy breakfast/dinner that looks stunning and it’s almost a guarantee you have all the ingredients for the pancake and a delicious topping. Throw some crispy bacon on the side and you have all the elements of a perfect meal.
