Today I’m sharing a tried and true, delicious, and super easy Strawberry Double Chocolate Chip Cookie recipe. Perfect for a Valentines Day treat, your people will love you for baking these.
I’ll admit, strawberry isn’t usually my go-to flavor, it’s chocolate, but the first time I experimented in the kitchen and created these goodies, I was hooked. My youngest kiddo Isaac is seven, and he loves to help me in the kitchen, especially using the hand mixer (he’s not allowed to go past level 1 for speed, but he doesn’t mind). He’s usually got good ideas too. In fact, it was his idea to include the two types of chocolate chips in this recipe (white and dark), and let me tell you, the double chocolate flavors set these cookies apart from the rest.
The past Christmas I made my first batch of
cake batter cookies, and I figured if it worked for a funfetti cake mix, surely a strawberry cake would work too. I tweaked my original recipe just a little, and the results are delicious.
Here are your ingredients:
1 box of strawberry cake mix (18.25 oz)
1 teaspoon baking powder
1/2 cup vegetable oil
2 large eggs
2/3 cup white chocolate chips
2/3 cup dark chocolate chips
Instructions:
Preheat oven to 350˚
In a large bowl, combine all ingredients and mix well until they form a sticky dough.
Refrigerate dough for 30 minutes.
Remove from fridge and roll dough into tall oval shaped 1 inch balls. (this shape may sound odd, but trust me, the cookies turn out perfectly rounded and fluffy when you do it like this).
Bake for 8-10 minutes.
Let cool before serving.
