I looked through my cabinet and I had everything I needed so I finally made these this past weekend.
And all I can say is YUM!!! 🙂
They do take some time but they are fabulous!
Cupcake Poppers
Ingredients:
-1 box Betty Crocker Super Moist White Cake (or your favorite brand/recipe)
(I thought I had a plain Vanilla cake mix but it was Funfetti so that is what I used and it worked just fine.)
-Food coloring, liquid or gel
-Vanilla Frosting
-Mini cupcake pan
Mix the batter as directed on the box.
Then separate into 4 different bowls, about 1- 1 1/4 cups batter in each.
Add 5-6 drops of food coloring to each bowl and mix well.
Spoon batter into mini cupcake tins and bake @ 350° for 8-10 minutes or until they pass the toothpick test.
While the cupcakes are baking, separate frosting into 4 small bowls, and add 5-6 drops of food coloring to each and mix well.
Once the cupcakes are cool, cut off tops with a serrated knife.
You can eat those bottoms if you just HAVE to try the cake for a taste test. (HIGHLY suggested.)
Spread some color coordinated frosting onto the underside of one of the tops and then sandwich another top of the same color on top.
I then placed them into mini cupcake liners to prevent them from sticking to the bottom of my pan and so you can pick them up easily.

Just want to tell you I've been enjoying your blog. Lots of great ideas. Did you decide on a color for the frames yet from your post the other day? I know you want to stay away from green (my fav color) but how about a mixing it up a little and trying both brown frames AND some burnt umber frames(or some other deep brownish orange).
